Perga, also known as Bee bread or Ambrosia, is a real superfood, high in protein and antioxidants and pro-biotics.
Perga is pollen from flowers that the bees store in their hives. To preserve the pollen, they add some enzymes to it that starts a lactofermentation process that makes the pollen both healthier and longer lasting. Pollen is high in healthy proteins. The fermentation of bee bread is similar to kimchi or sauerkraut, which means it is full of healthy bacteria that support gut health. The taste of perga is slightly sweet-sour, with a clear taste of delicious pollen. Unsurprisingly, perga goes very well with honey!
Unlike fresh pollen, perga is more digestible and the nutrients are more easily absorbed by the body. This is because the lactofermentation breaks up the hard protective shell around the pollen grains that make it difficult for the digestive system to absorb nutrients form fresh pollen. Therefore the fermentation has a double benefit in perga: better nutritional uptake combined with probiotic lactic acid bacteria that support gut health.
Perga is traditionally eaten in eastern Europe, where there is an old beekeeping culture and the health benefits of bee all products are well known and understood. Perga is said to have a long list of health benefits, that I am not allowed to tell you about here (bureaucracy), so you need to look that up for yourselves 😉
Our perga is pure pollen in the shape of a cell of honeycomb, but without the wax. Extracting perga is a very labour-intensive manual process, because cleaning the wax chunks from the pollen parts needs to be done entirely by hand. Perga is suitable for a raw-food diet, because there is no heat involved in the extraction or cleaning of perga. In fact, the extraction is done while frozen, and after cleaning, the perga is dried at 35° (same temperature as inside the beehive) for a few hours, so that it stores at room temperature.
The colour of out Finnish perga varies along with the large variety of colours of pollen. Dried perga is generally brown in colour.
Eat one or two spoon-fulls per day for supporting a healthy lifestyle and sound sleep.
